Welsh Rarebit Glazed Cod

Welsh Rarebit Glazed Cod, on a bed of Fire Roasted Pears and Red Pepper Salad, with a drizzle of Fig Balsamic

  • Fresh Cod
  • Welsh Rarebit Mix
  • Conference Pears
  • Basil Leaves
  • Fire Roasted Red Peppers
  • Fig Balsamic Dressing

• Peel and core the pears and poach in sugar syrup until al dente. Bake alongside the cod fillets
• Drain the peppers and liquidise until smooth
• Brush the cod with butter and season. Spread Rarebit mixture onto the flesh of
fish and bake for 8-10 mins
• Deep fry basil leaves and drain on absorbent paper
• Plate up as shown in the photo and drizzle with the fig balsamic dressing
